Simba's Chicken Grub

 

Inspired by Disney’s The Lion King

It’s time to rustle up some grub. This tasty yet satisfying recipe will have your kids squirming for more. These grubs taste like chicken. This recipe produces 8 delicious bug snacks.

Snacktivity: Read the book, I am Simba, and make this healthy snack together.

 
 

Ingredients

1 chicken breast

4 fresh basil leaves

1 can low sodium medium size whole olives

8 cherry tomatoes

1 large cucumber

1 bunch of fresh chives

1/3 cup of almond butter (or hummus)

1 teaspoon black sesame seeds

Directions

Ladybugs

  • Use a thin slice of cucumber for the base

  • Add a small amount of almond butter to the top of your cucumber

  • Add a thin slice of chicken on top of the almond butter

  • Add a little more almond butter on top of the chicken

  • Lay one fresh basil leaf on top

  • For the wings, use a cherry tomato that is cut in half, then cut the cherry tomato into quarters without cutting all the way through the skin

  • For the spots, place black sesame seeds on the tomato

  • Add a tiny bit more almond butter before placing the head

  • For the head, use an olive that’s cut into quarters

  • For the antenna, insert two sliced chives into the olive

  • Repeat this process to make 3 additional ladybugs

Grubs

  • Slice a 3 inch piece of celery for the base

  • Spread almond butter to fill the middle

  • For the head, use a cherry tomato that’s cut into quarters and has enough skin to hold it together

  • For the body, use two olives that have been cut to length

  • For the antenna, insert two sliced chives into the tomato

  • Repeat this process to make 3 additional grubs
