You can have your very own rainbow, and eat it too, with this colorful snack idea.

Snacktivity: Read the book, A Rainbow of My Own, and make this healthy snack.

 
 

Ingredients

Honey mustard:

  • 1 tablespoon yellow mustard

  • 1 tablespoon honey (not for children under 1)

1 red bell pepper

1 orange bell pepper

1 yellow bell pepper

1 green bell pepper

1 small pack of blueberries

1 head cauliflower

Directions

Honey mustard (pot of gold):

  • In a small bowl, combine mustard and honey.

  • Stir until blended.

Slice each bell pepper horizontally making about 1/2 inch thick circular slices.

Cut each ring on one side to open up the circle.

Stack the bell peppers on their side to create a rainbow.

Cut the ends of the rainbow so they are even.

Place the blueberries on top of the green bell pepper.

Place the cauliflower (clouds) at the ends of the rainbow.

Enjoy eating the rainbow with your pot of gold.
