Olaf Puddle Yogurt Parfait

 

Inspired by Disney’s Frozen

Melt your kids hearts with this delicious yogurt, oat and fruit parfait recipe, colored with only natural colors. Makes 2 kid sized bowls.

Ingredients

1 cup and 3 tablespoons 2% low fat plain greek yogurt

8 sliced almonds

10 dried blueberries

1/4 cup honey oat granola

2 medium bananas

1/2 cup frozen pineapple

4 medium strawberries

1/2 teaspoon blue spirulina (natural food coloring)

1 teaspoon maple syrup (optional)

Directions

In a blender, blend the honey oat granola for 20 seconds on high.

Empty the mixture into a small bowl and set aside for later.

In a blender, add 2 cups low fat plain greek yogurt, 1/2 cup of frozen pineapple, and two bananas. Blend until smooth.

Add and blend a ½ teaspoon of blue spirulina. Blend on medium until the light blue color is thoroughly mixed in. Leave the blue mixture in the blender.

Cut 4 medium strawberries and 1 banana into small chunks. In two small bowls, divide the fruit evenly and spread it along the bottom.

Pour the ocean mixture into each bowl over the fruit.

Sprinkle your sandy oat mixture over ¾ of each bowl.

In a small bowl, whip 3 tablespoons of 2% plain greek yogurt. You can add a teaspoon of pure maple syrup to make it easier to spread. Slowly spread ½ of the mixture into a round blob onto each sandy beach.

Add four sliced almonds, edge first, into each puddle for Olaf’s hair and arms.

Place two dried blueberries for his eyes and 3 dried blueberries for his buttons.

Add a triangular carrot for his nose to each Olaf.

Add a beach umbrella to each bowl.
